I’ve never been fan of riced cauliflower and it’s always one of the last veggies on the veggie trays (celery being the first), but it was suggested that I try to use the rest of my batch and make cauliflower tots and let me tell you, what a genius idea!

Here’s the recipe:
2 cups riced cauliflower
2 eggs
1/4 cup breadcrumbs
1/4 Parmesan cheese
1/4 tsp onion powder
1 tsp Italian seasoning

Mix all ingredients together.
Form into balls.
Cook in Air-fryer (or oven) at 400 degrees for about 10-15 minutes.
